Delamare is a strange place,you either love it or hate it.
There are two way-marked family trails that are a good starting point for any newcomers to the forest and are well surfaced and have good route markings.
Once you have gained your bearings its best to just head off and explore,pretty much any track you see can be ridden and given the forests compact nature you can't really get lost.
Trails can become very muddy in the winter but that all adds to the fun.
Best option and what I've always done is hook up with the local bike shop evening rides (Thursday eve from the shop) and they will take you on all the 'hidden' trails.

Lots of unmarked trails
Good cafe ,bike shop and lots of parking
Good for beginners due to lack of climbing and limited technical features on the official trails.
Bad Points
gets very busy at weekends
